Mushroom, Onion & Gruyère Soup
Heat oil in large saucepan over medium heat. Add onion and mushrooms. Cook until onion turns golden and no liquid remains, about 8 min.
Add broth and milk. Bring to a boil then reduce to a simmer. Add thyme and cook 5 min. Remove soup from heat and ladle into bowls. Top each bowl with cheese to serve.
