Directions

  1. Line a baking sheet with parchment paper. Preheat oven to 300˚F (150˚C). In large bowl, combine canola oil, maple syrup, coconut oil and vanilla. Whisk in brown sugar, cardamom, cinnamon and salt. Add rolled oats, pecans and coconut; tossing to coat. Spread mixture on lined baking sheet.

  2. Bake 30 to 40 min., stirring every 10 min., or until golden and crisp. Cool completely. Store in airtight container.
